Pan Fried Padron Peppers  – one of the easiest dishes to make and the perfect appetiser to serve with drinks or as a side to some tapas!  These salty, smoky, tasty treats are honestly so easy to make, it’s almost embarrassing to call this a recipe!Pan Fried Padron Peppers Tapas Meal

These bite-sized delicacies are normally served in Spain as an aperitif or appetiser and they are such a yummy way to start off a meal.  They are sweet peppers and once fried, they have a slightly smoky, charred flavour to them.  There’s an old saying with Padron Peppers that every twelfth one is spicy so eating them is a bit of Russian roulette.  I myself have had a few spicy ones in my life but I know plenty of people that have had none, so it’s probably more like one in fifty! (And even then they’re not that spicy!  They won’t blow your head off!)

So on to this recipe that’s not really a recipe!  All you have to do to cook the peppers is heat the oil in a frying pan.  Add the raw peppers and allow them to colour and blister in the oil.  Flip them over and do the same on the other side so that they become soft and charred. Then, transfer them to a serving dish and sprinkle liberally with sea salt.  Serve them immediately while they are still warm.

I find they go best with a glass of Cava or Rosé but the boys swear by Padron Peppers with Çerveza (Beer).  You could serve them as part of a meal alongside other tapas dishes like Gambas Al Ajillo or Chorizo Cooked in Red Wine, or Sweet Patatas Bravas.  Plus all that salt on them gives you an excuse to have another drink!  Cheers!Pan Fried Padron Peppers Tapas Meal

Ingredients
  

  • 150 g padron peppers (around 15-20 peppers)
  • 2 tsps olive oil
  • sea salt

Instructions
 

  • Heat the oil in a frying pan.
  • Add the peppers and allow to colour and blister,
  • Flip and do the same on the other side so that they become soft.
  • Remove to a serving dish and sprinkle liberally with sea salt.
