BBQ Salmon with Salsa Verde

When the weather warms up, we’re all about the BBQ in our house!  If you’re looking for something a little bit different than the usual burgers and sausages on the BBQ then this is a really easy and tasty dish to try out.  Ready in less than 10 minutes, this BBQ Salmon with Salsa Verde is a fast weeknight meal but can also be an impressive dish to serve to guests.BBQ Salmon with Salsa Verde & Roasted Vegetables

Start by pre-heating your BBQ to a high temperature.  Whether you use coals or gas, you will know how long this takes for your own BBQ.  While the BBQ is heating up, you can prep the salmon and the salsa verde. Drizzle some olive oil over the salmon and season well with salt and pepper.  To make the salsa verde, add all the ingredients to a food processor and blitz until smooth. Season to taste with salt and pepper – be aware that the capers and olives are salty ingredients so you may not need too much salt.

When the BBQ is up to temperature, grill the fish – I like to do about 4 minutes on each side so that it is slightly rare in the middle.  I usually like to use a fish grilling basket as I find this helps if the fish starts to fall apart.  It’s easier to flip in a basket and won’t stick to the BBQ, but as you can see from my pictures, I didn’t in this instance and it worked absolutely fine so it’s just a matter of preference.  You could also bake the salmon in the oven or pan-fry it if you don’t want to use the BBQ method.

Once the salmon is cooked through, remove it from the heat and serve immediately with a drizzle of the salsa verde and plenty of fresh vegetables or salad. I served mine with. some roasted butternut squash and grilled asparagus and tomatoes.

This dish is so light and fresh, the meaty salmon pairs perfectly with the zingy, tart salsa verde and it is a perfect summer meal.  Mix things up a bit by trying a different sauce with the salmon.  Maybe a pesto or a mango salsa or even a hollandaise?BBQ Salmon with Salsa Verde & Roasted Vegetables

Equipment

  • 1 food processor
  • 1 fish grilling basket optional

Ingredients
  

  • 300 g salmon
  • 1 tbsp olive oil

For the Salsa Verde

  • 15 g fresh basil leaves
  • 15 g fresh tarragon leaves
  • 15 g fresh flat leaf parsley
  • 2 tsps capers
  • 8 green olives
  • 1 clove garlic
  • salt and pepper

Instructions
 

  • Pre-heat your BBQ to a high temperature.
  • While the BBQ is heating up, prep the salmon and the salsa verde.
  • Drizzle some olive oil over the salmon and season well with salt and pepper.
  • Add all the salsa verde ingredients to a food processor and blitz until smooth.
  • Season to taste.
  • Grill the fish on the BBQ - I like about 4 minutes on each side so it is rare in the middle.
  • Remove the salmon from the heat and serve with a drizzle of the salsa verde.
