Raspberry Mint Lime Cooler – Non-Alcoholic
I have a confession to make – I’m taking a couple of weeks off the wine! After our wonderful trip to France and Spain and the many wine tastings we did in Rioja and Bordeaux, I felt like I needed a bit of a break. I’m actually following the 3-week gut-reset diet from the book The Autoimmune Fix by Dr Tom O’Bryan so I’m off the dairy and the honey too. No need to panic though. I’m off on holiday to Portugal in a couple of weeks where I’ll definitely be indulging in my share of the Vinho Verde! I created this Raspberry Mint Lime Cooler as an alternative to sparkling water which I was getting so bored of and I can’t get enough of it now. It’s so refreshing and so delicious that I really didn’t miss the wine at our recent family BBQ! That’s definitely a first for me!
It’s so easy to make and takes less than 5 minutes to come together. Start by muddling the raspberries with a tbsp of water. When they are crushed, pass them through a sieve to extract the juice. Make sure to press down firmly on the seeds to get all the juice out.
Juice the half lime and add this to the glass with the raspberry juice. Finely slice the mint and add to the glass along with a few ice cubes and the whole raspberries. Top the glass up with the sparkling water and stir to mix everything well. Garnish the glass with a slice of fresh lime and your drink is ready to serve.
Refreshing and thirst quenching and delicious! If you multiply the recipe by 6 you can make an entire jug (pitcher) of the Raspberry Mint Lime Cooler which will be perfect if you have guests round. So much more interesting to serve them than plain water. And a great drink for a BBQ or outdoor-dining on a hot summer’s day!
Raspberry, Mint & Lime Cooler
Ingredients
- 5 raspberries
- 1/2 lime juiced
- 2 mint leaves
- 200ml sparkling water
Garnish
- 4 raspberries
- 1 slice lime
- ice cubes
Instructions
- Crush 5 raspberries very well with 1tbsp water.
- Pass the raspberries mixture through a sieve, pressing down firmly to extract all the juice into a waiting bowl or glass.
- Juice the half lime and add the juice to the glass with the raspberry juice.
- Finely chop the mint leaves and add to the glass.
- Add the ice cubes to the glass along with the whole raspberries as garnish.
- Top up the glass with sparkling water and stir.
- Finally garnish the glass with a slice of lime and it's ready to serve.
