Lemon Cauliflower Rice with Coriander (Cilantro)
Looking for a light and refreshing side dish to pair with my Asian Style, Sweet Chilli Salmon, I was immediately drawn to something citrussy and decided to create a Lemon Cauliflower Rice to cut through the sweetness of the salmon. I love the flavour of Lemon & Coriander (Cilantro) so I decided to add that too and the perfect accompanying side dish was created!
To make Cauliflower Rice it’s very simple. All you have to do is chop the florets off of the stalk and add them to a food processor. Then pulse the food processor until the cauliflower has been chopped into rice-sized pieces. I wouldn’t be without my Kenwood Food Processor. I love it as it has everything I need. A mixing bowl for cakes etc, a food processor and a blender (3 gadgets in one) so it doesn’t take up too much storage space – always a great idea in the kitchen. However, if you don’t have a food processor you can always grate the cauliflower to make your rice. It requires a lot more work but the results will be similar. You can use Cauliflower Rice made in this way for many recipes such as my Cauliflower Tabbouleh, my Smoked Salmon & Summer Vegetable Risotto and my Kimchi Fried Rice!
So once you have your cauliflower rice you are ready to prepare the dish. Start by heating the oil in a frying pan and frying the garlic until it’s softened.
Add the cauliflower rice and fry for about 5 minutes to soften it as well. Meanwhile, you can zest (grate the rind) and juice the lemon. After 5 mins of cooking time, add this to the cauliflower.
Remove the leaves from the coriander (cilantro) stalks. Chop the leaves quite finely and stir through the Lemon Cauliflower Rice at the last minute.
Season with plenty of salt and pepper and it’s ready to serve.
I served it with my Sweet Chilli Salmon and it went amazingly well. The delicate citrus flavour really balanced with the sweet, spiciness of the salmon and Dan (who’d asked for noodles with his salmon) even agreed that the Lemon Cauliflower Rice was better! I can see this working as a summer side dish at BBQs too along with Salmon Skewers or even with your favourite Curry!
Lemon Cauliflower Rice with Coriander (Cilantro)
Ingredients
- 1/2 head cauliflower
- 1 lemon juice & zest
- 2 cloves garlic
- 2 tsps olive oil
- 1 small bunch fresh coriander (cilantro)
- salt & pepper
Instructions
- Rice the cauliflower by pulsing in a food processor or by grating it.
- Heat the oil and fry the garlic until it is softened.
- Add the riced cauliflower to the frying pan and cook for 3-5 minutes.
- Meanwhile, zest the lemon (grate the rind) and then juice it.
- Add the juice and the lemon zest to the cauliflower rice.
- Remove the leaves from the coriander (cilantro) stalks and chop them finely.
- Stir the chopped coriander leaves through the Lemon Cauliflower Rice and season with plenty of salt and pepper. Serve.

I have not tried making my own cauliflower rice. The frozen cauliflower rice is disgusting. Using my food processor, though, sounds easy enough. We eat a lot of lime, cilantro rice. I think I’ll give this a try for a change of pace.
I’ve never heard of frozen cauliflower – sounds like it would go all mushy if you tried to cook it – the fresh stuff is delicious though!

Since going low carb, rice is one of the things I find myself missing most. I used to make a great cilantro rice. This might have to be my replacement. I kept trying to win my husband over to this great veggie but he has not developed a fondness yet. Maybe this will be the recipe that hooks him!

My father and I just got into a discussion about cilantro versus coriander. I LOVE cilantro, so this recipe is definitely something that I would try. I also like the addition of lemon, and that you’re using cauliflower to make the rice. I’ve made cauliflower mashed potatoes before, but not the rice yet.
I love it too but my father can’t stand it – it’s a very polarizing herb so it would seems. Apparently 10% of the population have an enzyme or something whereby coriander tastes like soap or perfume to them!
