Buttered & Charred Lettuce with Peas

I love peas!  They have to be one of my favourite veggies.  So versatile, easy to cook and I always have a bag on hand in the freezer.  The only thing with peas is that they’re not very elegant or sophisticated!  A bowl of frozen peas isn’t going to impress anyone so I created this really easy recipe which is so simple to make but really elevates the humble pea to another level.  I served this Buttered & Charred Lettuce with Peas alongside a roast dinner on Sunday lunch, however, I think it would also work really well with a fish dish or something like a delicious Slow Cooked Lamb Shank.Charred Baby Gem Lettuce with Peas

The whole dish takes less than 10 minutes from start to finish.  You begin by heating the butter over a medium heat in the frying pan until completely melted and slightly bubbling.

Next, slice the Little Gem lettuces into wedges.  I like to use Little Gem as I love the slight sweetness that it has to it.  It also holds together in pieces if you slice it lengthways so it doesn’t fall apart as you cook it.  There are plenty of other lettuces you could use though, Cos Lettuce for example.

Fry the wedges of Little Gem in the butter until they start to wilt and char.  Flip them over and do the same to the other side so that they’re browned and coated in plenty of the buttery sauce.

Meanwhile, boil the peas from frozen for about 5 minutes until cooked through.Boiled Peas

Once cooked, pour the peas onto the serving plate and top with the wedges of lettuce.  You can drizzle the remaining butter from the pan over the top too if you want to.  Add a squeeze of lemon over the whole dish to freshen it up.  Finally, season the dish well with salt and pepper and serve warm.Charred Baby Gem Lettuce with Peas

And there you have it Buttered and Charred Lettuce with peas – the perfect way to serve peas at your next dinner party.  The butter adds a delicious richness to the dish  and the slight tang of the lemon juice lifts everything.  It’s almost as easy as just making a bowl of frozen peas but looks so much more impressive and enticing.  You could serve it with my Vegan Lentil Shepherds Pie too, for a completely vegetarian meal.

Ingredients
  

  • 2 sml lettuce (eg Little Gem)
  • 30 g butter
  • 500 g frozen peas
  • 1/2 lemon
  • salt & black pepper

Instructions
 

  • Heat the butter over a medium heat in the frying pan until melted and slightly bubbling.
  • Slice the lettuces into wedges. 
  • Fry the lettuce wedges in the butter until they start to wilt and char.  Flip them over and fry on the other side until browned.
  • Meanwhile, boil the peas from frozen for about 5 minutes until cooked through.
  • Pour the peas onto the serving plate and top with the wedges of lettuce.  Drizzle the remaining butter from the pan over the top (optional).
  • Squeeze the lemon over and season well with salt and pepper.
  • Serve warm.
