Grainfree Blackberry Apple Crumble

In our house, there’s only one thing that passes for dessert on a Sunday lunch and that’s Crumble!  Whether it’s rhubarb, plum or apple and cinnamon it’s a family favourite that everyone enjoys.  Today we decided to make an Apple & Blackberry crumble using some of the blackberries from our garden that we’d picked last summer and frozen.  There’s also the issue that I don’t eat grains or gluten so a standard crumble made with regular flour isn’t going to work.  This Grainfree Blackberry Apple Crumble uses ground almonds to make the crumble topping and I think it tastes even more delicious than a regular one!Grainfree Blackberry Apple Crumble

To make the crumble, you first need to make the filling.  Start by peeling the cooking apples and chopping them into bite-sized pieces.  (Make sure the pieces are a similar size so that they cook at the same rate).  Cook the apple on a very low heat in a saucepan with the water and 2 tbsps of the honey until it starts to break down. (This should take around 30 mins).  You can cook them for as long or as little as you like depending on whether or not you want your apples to be softer or have a bit more crunch to them.  You can also add a touch more honey depending on how sweet you like your desserts – just remember the topping is very sweet so don’t add too much!

Next, add the blackberries and stir them through to distribute them evenly. (If you’re using frozen blackberries the residual heat from the apples will thaw them at this point).  Remove the fruit from the heat and set aside.

While the fruit is cooking, preheat your oven to 180C (350F).  Now it’s time to make the crumble topping.  In a food processor, add the ground almonds, butter and the remaining honey.  Pulse the food processor until the ingredients are combined and the mixture resembles a crumble topping.  (It might clump together a bit more than a standard crumble topping due to the ingredients.  You can always break up any bigger clumps with a fork).Grainfree Crumble Topping

Now it’s time to assemble the crumble.  Transfer the apple and blackberry mixture to an ovenproof dish.  Stir the flaked almonds through the crumble mixture and spoon it on top of the apple and blackberry filling.Grainfree Blackberry Apple Crumble Uncooked

Bake The Grainfree Blackberry Apple Crumble for around 20-25 mins until the top of the crumble has browned slightly.  Make sure to keep an eye as almond flour has a tendency to burn quite quickly.  Once it has just started to brown, take it out as otherwise it will be black and burnt before you know it!

Serve the crumble warm with cream, custard or ice cream. It’s also delicious with a large dollop of Greek yoghurt!

  • 50 g flaked almonds
