(Zucchini) Courgette Pea & Feta Summer Salad
Wandering around the farm shop the other day I was completely inspired by the amazing range of produce. Everything looked and smelled so fresh and inviting, but what really caught my eye were the courgettes (zucchini). They had both yellow and green ones and I knew then that I wanted to make them the star of a salad for our BBQ that afternoon. The colours just screamed summer salad to me so I had a think about what best to pair them with for an exciting flavour combination. I spotted some fresh pea pods. There’s definitely something about fresh shelled peas that the store-bought or frozen ones can’t even get close to. The fresh, almost chalky flavour is so delicious and I love the crunchy texture they have if you eat them raw. I thought the salty, tanginess of feta would complement the dish really well and so a Courgette Pea & Feta Salad was on the cards for the BBQ.
I Spiralized the courgettes using the ribbon blade rather than the ones used to make courgetti spaghetti (zoodles). The two colours looked so summery together and made for a really stunning dish.Next I had to shell the fresh peas – such a summertime favourite of mine. It’s very easy to do. All you have to do is split open the pods and run your finger down behind the peas to pop them out. It really doesn’t take long. It’s definitely worth using the fresh ones if you can get your hands on them.
I sprinkled these over the top of the courgettes and then crumbled the feta over the top also. Then I felt like the salad needed a bit of texture. I went hunting in the pantry and found some pistachios. Adding them for a bit of crunch and I also then finely chopped some fresh mint leaves for that extra summer taste.
Every great salad needs a dressing to pull it all together so I made a really simple one by squeezing over the juice of half a lemon and then drizzling over the olive oil. I seasoned with plenty of black pepper and sprinkled over the mint leaves. And there you have it, Courgette Pea & Feta Salad with Pistachios, Mint & Lemon. Doesn’t it look beautiful?Light and fresh it was the perfect accompaniment to the meat-heavy BBQ. The tanginess from the feta and the crispness of the vegetables were a welcome flavour contrast to the rich and heavy burgers and the Moroccan Chicken Skewers that it was served with. This would also make a really delicious light summer lunch with a cool crisp glass of white wine!
(Zucchini) Courgette Pea & Feta Summer Salad
Ingredients
- 2 courgettes (zucchini) I used 1 yellow and 1 green but it's not essential
- 30 g feta cheese
- 2 large handfuls fresh peas in pods or 2 heaped tbsps shelled peas
- 10 mint leaves
- 3 tbsps pistachio nuts
- 1/2 lemon juiced
- 1 tbsp olive oil
- salt & pepper
Instructions
- Spiralise the courgettes (zucchini) using the ribbon blade.
- Shell the peas and sprinkle over the salad.
- Crumble the feta and sprinkle over the salad
- Sprinkle the pistachios over the salad.
- Squeeze the juice from the lemon over the salad.
- Drizzle the olive oil over the top.
- Finely slice the mint leaves and sprinkle over the salad.
- Season with salt and plenty of fresh ground black pepper.

So I had no idea that zucchini is also called courgette! This looks like such a yummy recipe though…I love spiralizing veggies! Such a good way to trick yourself into eating more healthy food 🙂 xx
If you said zucchini to an English person they’d probably have no idea what you were talking about. So weird how things have such different names. The big ones are eggplant US vs aubergine UK and Cilantro US vs Coriander UK!

First of all it looks so beautiful i’d be afraid to eat it but would still do. I like how the ingredients are fresh and healthy, I will be trying this out and i’m hoping I can turn my son to like it since once they are spiralised he would probably think it’s coloured pasta which is his favourite.
