Grainfree Maple Walnut Banana Bread
It’s been a long-standing joke that 2020 was the year of the banana bread. Being stuck at home, many people have turned to baking and banana bread is an obvious place to start for novice bakers. It’s such an easy recipe to master and once you’ve got it you can add in so many different flavours to mix things up a bit. This is my take on a slightly different Banana Bread, a Grainfree Maple Walnut Banana Bread!
So how to make the Grainfree Maple Walnut Banana Bread? Start by preheating the oven to 180C (350F) and line a loaf tin with baking parchment (greaseproof paper).
Next, you need to crush the walnuts if you bought walnut halves. (Optional step: keep back 8 halves to decorate the top). Place the walnut halves in a ziplock bag or small bowl and crush gently with the end of a rolling pin until you get smaller chunks. Then, toast the walnut pieces in a dry frying pan over a low heat until they start to brown (about 5 mins). Watch them closely as nuts tend to go from brown to burnt very quickly!
Meanwhile, in a large mixing bowl, mash the bananas with a fork or potato masher. (You want to use brown bananas or ones with a lot of brown spots on them. They are softer, sweeter and it’s a great way of using up bananas that are past their best for eating!) Then, add the almond flour (ground almonds), eggs, coconut oil and maple syrup and mix well. Finally, add the toasted walnut pieces and bicarbonate of soda to the bowl and mix well again to make sure everything is evenly distributed.
Pour the maple walnut banana bread mixture into the loaf tin and top with the walnut halves to decorate.
Bake the Grainfree Maple Walnut Banana Bread in the oven for 40-45 mins or until a skewer inserted comes out clean. If the top starts to brown before the cake is ready, cover with a piece of tin-foil to prevent it getting too brown.
Allow the cake to cool on a wire rack before slicing. This just gives it time to firm up so that it doesn’t fall apart when you slice it.
This recipe is so delicious. The maple syrup gives it a slightly different flavour from traditional Banana Bread. It’s a bit more caramelised – and the walnuts give a lovely crunch! There are so many different variations though. You could add some cacao nibs or some raisins or even try my Banana Cinnamon Breakfast Muffins or Chocolate Banana Muffins with Pecans!
It’s even healthy enough to have for breakfast! Serve as it is or warm through and top with butter and an extra drizzle of maple syrup for an even more decadent treat!
Grainfree Maple Walnut Banana Bread
Ingredients
- 4-5 bananas (very ripe)(about 2 cups)
- 200 g almond flour (ground almonds)(2 cups)
- 3 tbsps maple syrup
- 120 g walnuts (1 cup)
- 3 eggs
- 2 tbsps coconut oil (melted)
- 1 tsp bicarbonate of soda (baking soda)
Optional
- 8 walnut halves (to decorate)
