Chicken Chorizo & Rioja, Spanish Style Stew

A hearty, warming dish with spicy, Spanish flavours.

Ingredients
  

  • 8 chicken thighs
  • 80 grams cooking chorizo
  • 2 tbsps olive oil
  • 2 red bell peppers
  • 2 red onions
  • 2 white onions
  • 4 cloves garlic
  • 1 small red chilli
  • 1 tsp paprika
  • 50 grams fresh spinach
  • 250 mls Rioja any red wine is fine but less authentically Spanish
  • 500 mls chicken stock
  • 2 sprigs fresh thyme
  • salt & pepper

Instructions
 

  • Preheat the oven to 180C.
  • Heat the oil in a large pan on the stove and fry off the chicken thighs so that they brown slightly. Remove from the pan.
  • Slice the chorizo into fairly large pieces (1/2 cm thick) and fry in the pan for 2 mins until browned and crispy on the outside. Remove from the pan.
  • Slice the onions and peppers and add to the pan with the olive oil and the oil released from the chorizo as it browned. Cook for about 5mins until softened and translucent.
  • Slice or crush the garlic and thinly slice the chilli. Add these to the pan and cook for a further couple of minutes.
  • Add the chicken thighs and chorizo back into the pan and pour over the stock and the red wine.
  • Remove the leaves from one of the thyme sprigs and sprinkle over the stew. Add the paprika and season everything well with salt and pepper.
  • Turn up the heat until it is bubbling and then put the lid on the dish and transfer to the oven.
  • Cook for about two hours until the chicken thighs and vegetables are tender and the sauce has reduced by half.
  • Place the raw spinach in the serving dish and spoon over the stew and all the juices. Return to the oven for 5 minutes to wilt the spinach. Serve.
