Lentil Feta Mint Salad

Ingredients
  

  • 500 g pre-cooked puy lentils
  • 1 large red onion
  • 300 g cherry/grape tomatoes
  • 150 g feta cheese
  • large bunch fresh mint leaves (around 30g)
  • 1 clove garlic
  • 1 lime (juiced)
  • 1 tbsp olive oil
  • salt & pepper

Instructions
 

  • Quarter the cherry/grape tomatoes, finely dice the onion and crush the garlic.
  • Finely chop the mint leaves, cube or crumble the feta cheese.
  • Add the tomatoes, onion, garlic, mint and half of the feta to a bowl with the puy lentils.
  • Add the olive oil and lime juice and mix well.
  • Season well with salt and black pepper.
  • When ready to eat, top the dish with the remaining feta cheese and serve.
