Lemon Cauliflower Rice with Coriander (Cilantro)

A light, fresh, low carb alternative to traditional rice, flavoured with lemon and coriander (cilantro)

Ingredients
  

  • 1/2 head cauliflower
  • 1 lemon juice & zest
  • 2 cloves garlic
  • 2 tsps olive oil
  • 1 small bunch fresh coriander (cilantro)
  • salt & pepper

Instructions
 

  • Rice the cauliflower by pulsing in a food processor or by grating it.
  • Heat the oil and fry the garlic until it is softened.
  • Add the riced cauliflower to the frying pan and cook for 3-5 minutes.
  • Meanwhile, zest the lemon (grate the rind) and then juice it.
  • Add the juice and the lemon zest to the cauliflower rice.
  • Remove the leaves from the coriander (cilantro) stalks and chop them finely.
  • Stir the chopped coriander leaves through the Lemon Cauliflower Rice and season with plenty of salt and pepper. Serve.
