Ingredients

cauliflower

lemon
juice & zest

garlic

small bunch
fresh coriander (cilantro)
salt & pepper
Instructions
Rice the cauliflower by pulsing in a food processor or by grating it.
Heat the oil and fry the garlic until it is softened.
Add the riced cauliflower to the frying pan and cook for 3-5 minutes.
Meanwhile, zest the lemon (grate the rind) and then juice it.
Add the juice and the lemon zest to the cauliflower rice.
Remove the leaves from the coriander (cilantro) stalks and chop them finely.
Stir the chopped coriander leaves through the Lemon Cauliflower Rice and season with plenty of salt and pepper. Serve.
