Banana Bread

Ingredients
  

  • 4-5 bananas (very ripe) (about 2 cups)
  • 200 g almond flour (ground almonds) (2 cups)
  • 2 tbsps honey
  • 3 eggs
  • 2 tbsps coconut oil melted
  • 1 tsp bicarbonate of soda

Instructions
 

  • Preheat oven to 180C (350F).
  • Mash the bananas in a mixing bowl and add the almond flour (ground almonds), eggs, coconut oil and honey. Mix well.
  • Add the bicarbonate of soda and mix again.
  • Line or grease a loaf tin and pour the banana bread mixture into the tin.
  • Bake in the oven for 35-40 mins or until a skewer inserted comes out clean. If the top starts to brown before the cake is ready, cover with a piece of tin-foil to prevent it getting too brown.
  • Allow to cool before slicing.
