Warm Lentil Bacon Salad with Shallots & Fresh Thyme

Ingredients
  

  • 4 rashers bacon
  • 250 g puy lentils (1 1/4 cups)(pre-cooked)(100g dry lentils - soaked)
  • 1 tsp olive oil
  • 2 sprigs fresh thyme
  • 2 cloves garlic
  • 4 medium shallots
  • 2 tsps butter (or oil for dairyfree)
  • salt & pepper

Instructions
 

  • Cut the bacon into strips (with scissors is easiest)
  • Heat 1tsp of oil on a medium heat and fry the bacon until crispy.
  • Remove the bacon from the pan leaving the bacon fat behind.
  • Dice up the shallots and crush the garlic.
  • Fry the shallots and garlic in the bacon fat adding a touch more oil if necessary - about 3-5 mins until softened and translucent.
  • Add the bacon back into the pan along with the lentils.
  • Mix everything well and heat through until the lentils are warm.
  • Remove the thyme leaves from their stalks and add to the lentils.
  • Season well with salt and pepper and stir the butter through.
  • Serve as a side dish with meat or fish or on its own as an appetiser.

Notes

Serves 4 people as a side dish or 2 people as a main dish.
