SCD Mincemeat

Ingredients
  

  • 5 medium pears
  • 100 g dates (2/3 cup)
  • 100 g dried apricots (2/3 cup)
  • 200 g raisins (1 cup)
  • 200 g sultanas (1 cup)
  • 50 g currants (1/4 cup)
  • 1 medium orange (zested and juiced)
  • 1 lemon (zested)
  • 50 g flaked almonds (1/2 cup)
  • 60 ml whiskey (1/4 cup)
  • 1 tbsp ground cinnamon
  • 1 tbsp mixed spice
  • 1/2 tsp ground nutmeg

Instructions
 

  • Peel and core the pears.
  • Add to the food processor along with the apricots and dates.
  • Blend on high until all combined into a paste. (It doesn't matter if there are still chunks of apricots and dates).
  • Add the raisins, sultanas and currants and stir through.
  • Zest the lemon and orange. Add the zest to the bowl along with the juice of the orange.
  • Add the flaked almonds and spices (cinnamon, mixed spice and nutmeg).
  • Finally, add the whiskey and stir everything through to combine well.
  • Store in sterilised glass jars.
