Grainfree Mince Pies

Ingredients
  

  • 300 g mincemeat
  • 250 g almond flour (ground almonds)(2.5 cups)
  • 3 tbsps coconut oil
  • 2 eggs

Instructions
 

  • Preheat the oven to 180C (350F).
  • Melt the coconut oil in a pan/microwave until it is liquid.
  • In a large bowl, add the almond flour, eggs and melted coconut oil and mix well until it starts to come together into a ball.
  • Place the ball of pastry between two large sheets of greaseproof paper. Roll out until around 2-3mm thick.
  • Cut strips of greaseproof paper and form crosses in each hole of the muffin tin.
  • Cut out pastry circles around 8-10cm diameter depending on the size of the holes in your muffin tin. Also cut out stars to go on the top of the mince pies.
  • Carefully press the pastry circles into the muffin tin.
  • Bake the empty pastry cases for around 8 mins until they just start to change colour.
  • Fill each pastry case with mincemeat and top with a pastry star.
  • Bake again for another 8-10 mins until golden brown.
  • Remove and allow to cool.
