Sweet Chilli Salmon with Sesame Seeds

I don’t tend cook a lot of Asian Recipes – I prefer Mediterranean foods, and the balance of flavours and spices in Asian cooking tends to be a little out of my comfort zone – (I’m working on it).  My Asian Sticky Chicken Thighs were a big hit in our house!  However, I do love sweet chilli sauce but it’s full of artificial flavours, colours and so much sugar! I decided to experiment and make my own version using honey.  Salmon was on the cards for tonight so Sweet Chilli Salmon it was!  I set about creating a Sweet Chilli Marinade for the fish which I would later pan fry!

So on to the recipe…chop up the chilli and crush or finely chop the garlic.  Add the honey and then spread the mixture all over the salmon fillets.  Season with some salt and pepper and leave in a covered dish in the fridge to marinate for up to an hour.  (If you don’t have the time to do this,  you can skip this step and cook them straight away but it will be more of a glaze on the outside of the salmon rather than having had the chance to penetrate a bit!Sweet Chilli Salmon with Sesame Seeds by Emma Eats & Explores - Grain-Free, Gluten-Free, Dairy-Free, Pescatarian, Dairy-Free, Paleo, SCD

When you are ready to cook the fish, heat the oil in a frying pan.  I like to fry mine in sesame oil.   It gives a more authentic Asian flavour but you could use whatever oil you have to hand.  When the oil is up to temperature, place the salmon in the pan so that it sizzles.  Sprinkle with half of the sesame seeds (I used black ones, purely because they looked pretty, the yellow ones work just as well).  Cook for about 3 mins and then flip the salmon over onto the other side.  Sprinkle with the rest of the seeds and cook for a further 3 mins.  This cooking time ensures you get a rare salmon which is how I like it.  If you prefer your fish a bit more well done then cook for another minute or two on each side.

I served it with some Roasted Asparagus and Tenderstem Broccoli and my Lemon & Coriander (Cilantro) Cauliflower Rice which was so delicious.  Tangy and zesty it cut through the sweetness of the salmon perfectly and the dish got a big thumbs up from Dan.  Sticky, sweet, with a hint of spice and some nice crunch from the sesame seeds, this dinner ticked all the boxes.  Everything you’d want from Sweet Chilli Salmon – an easy and quick weeknight meal that feels just a little bit special!Sweet Chilli Salmon with Sesame Seeds by Emma Eats & Explores - Grain-Free, Gluten-Free, Dairy-Free, Pescatarian, Dairy-Free, Paleo, SCD

Sweet Chilli Salmon with Sesame Seeds

Ingredients
  

  • 2 fillets salmon around 150g each
  • 2 tbsps honey
  • 3 cloves garlic
  • 1 red chilli
  • 2 tsps sesame oil
  • 1 tbsp sesame seeds
  • salt & pepper

Instructions
 

  • Chop up the chilli and crush or finely chop the garlic.
  • Add to the honey and spread the mixture all over the salmon fillets.
  • Season with salt and pepper and leave to marinate for up to 1 hour.
  • Heat the sesame oil in a frying pan and add the salmon.
  • Sprinkle over half of the sesame seeds and cook for about 3 mins.
  • Flip the salmon over, sprinkle over the other half of the seeds and cook for a further 3 mins. (This should ensure a rare salmon fillet which is how I like it - if you prefer yours well done, leave it in the pan for a minute longer on each side!).
  • Remove from the pan and serve.
