Cinnamon & Raisin Almond Flour Cookies

I don’t have a particularly sweet tooth but even I can’t resist these Cinnamon & Raisin Almond Flour Cookies.

Cinnamon & Raisin Almond Flour Cookies with CoffeeYou’d never guess that they’re grain, gluten and refined sugar-free as they taste absolutely delicious – better than most other cookies in my opinion.  And they’re so easy to make.  It’s all done in one mixing bowl and takes about 30mins from start to finish.  I love the combination of cinnamon and raisin and it really comes through in this cookie. I think it tastes Christmassy like my Cinnamon Raisin Bread, which I serve toasted on Christmas Morning, but believe me, you’ll want to make these throughout the whole year!

Cinnamon & Raisin Almond Flour Cookies mixTo make the Cinnamon & Raisin Almond Flour Cookies, you start by preheating the oven to 180C (350F).  Then line a baking tray with parchment (greaseproof) paper.  Next you need to melt the butter and add it to the almond flour and honey in a mixing bowl.  Add the cinnamon, vanilla essence and raisins and mix until everything is combined and the raisins are evenly distributed.  Finally, you add the baking soda and mix well again. 

Roll the mixture into 12 evenly sized balls and press each one down to flatten them onto the parchment-lined baking tray (mine were about 1cm thick).  Then all you do is pop them into the oven for about 8 mins – check them every so often as almond flour has a tendency to burn quite easily.  Once they have turned golden brown I like to flip them over so that the other side gets a bit of colour too and they crisp up a bit (6-8 mins on the other side should do it)

And that’s all there is to it!  A one-bowl recipe so less washing up – always a bonus!  Just try not to eat all the mixture before you bake it – it is delicious though!

The cookies are done when they’re golden brown and crispy around the edges.  They’re a soft, squidgy, chewy cookie rather than a crisp one and they’re so moreish!  Oh!  And they will make your kitchen smell absolutely divine.  You won’t be able to resist having one straight out of the oven, and that’s how I like them best, warm with a cup of coffee as an afternoon pick-me-up.

Cinnamon and Raisin Almond Flour Cookies

Ingredients
  

  • 2 1/2 cups almond flour (ground almonds)
  • 1/2 cup butter (melted)
  • 1/3 cup honey
  • 2 tsps vanilla essence
  • 1 tbsp ground cinnamon
  • 1/2 cup raisins
  • 1/4 tsp bicarbonate of soda

Instructions
 

  • Preheat the oven to 180C (350F) and line a baking tray with parchment (greaseproof) paper.
  • Melt the butter and add to almond flour and honey in a mixing bowl.
  • Add the vanilla essence, the cinnamon and raisins and mix well until everything is combined.
  • Add the bicarbonate of soda and mix well once more.
  • Split the mixture into 12 evenly sized pieces and roll into balls.
  • Place on the lined baking tray and press down to flatten them to about 1cm thick.
  • Bake in the oven for about 8 mins -check them every so often so that they don't get too brown.
  • Once they have turned golden brown flip them over (carefully as they will be quite soft) so the other side gets a bit of colour they crisp up a bit (5-6 mins on the other side should do it).
  • Remove from the oven and allow to cool slightly so that they set firm.

Notes

Almond flour has a tendency to burn quite easily so keep an eye on these cookies as they bake to make sure that they don't get too brown too quickly.
Once they start to brown, they tend to burn very quickly after.
